
Balsamic Glazed Halibut
Halibut is mild and takes flavor very well. This recipe is so easy, even if you’re a timid seafood chef, you’ll master this the first time out.

1 large halibut fillet
1 teaspoon brown sugar, packed
1 tablespoon Dijon mustard
1/2 teaspoon black pepper
2 tablespoons balsamic vinegar
Cooking spray

In a bowl, mix together the vinegar, brown sugar and mustard.
Rinse the fish and pat dry with paper towels.
Lightly spray fish with cooking spray, then sprinkle with black pepper.
Lightly coat a large, non-stick skillet with cooking spray and heat over medium-high heat.
Add fish until cooked on the bottom, about 4 minutes.
Turn fish over.
Spoon vinegar mixture over top and sides.
Reduce heat and cook until fish is opaque but still moist, about 4-5 minutes.
