Halibut Bites

If your football crowd is tired of pizza and nachos (and you’re tired of making them) here’s a crispy-crunchy-delicious way to get their eyes off the screen and onto your creation. These won’t guarantee a victory for the home team, but a loss will certainly go down easier with a handful of these saucy and succulent appetizers.

1 pound of halibut

1 cup flour

2 teaspoons baking powder

1/2 cup milk

1/2 cup water

2 cups vegetable oil

Tartar Sauce
1/2 cup mayo

1 1/2 teaspoons lemon juice

3 tablespoons dill relish

Lightly season the fish filets with salt and pepper, then cut into 1 inch chunks.

In a bowl, combine the flour, salt, baking powder, water and milk and mix until combined.

Heat the oil to 375ยบ F in a stainless steel, non-stick or cast iron pan.

Submerge the fish in the batter, then scoop out a few pieces at a time and add them to the hot oil. You should hear the oil crackle.

Once one side of the fish is golden brown, turn and cook the other side.

When the pieces finish cooking, scoop them out and place on a tray lined with paper towels to absorb any oil left on the surface.

Lay out tortilla chips, put a dollop of tartar sauce on each, then top with one of the fish bites and a sprig of fresh dill.
