
Perfect Pan-Seared Asian Scallops
Ginger, sake butter, sesame and scallops—if this doesn’t reset your standards for home-cooked seafood, nothing will. The delicate sweetness of dry-packed scallops is amplified by the sake butter while the soy/ginger/shallots put it right over the top. The kicker is that the whole dish takes 15 minutes from fridge to fork! Don’t have the shells? Don’t worry—these are just as tasty from a serving platter.

12 scallops
½ tablespoon vegetable oil
½ tablespoon sesame oil
3 tablespoons unsalted butter
¼ cup sake
1 ½ tablespoons soy sauce
1 tablespoon mirin (or 1 tablespoon of white wine vinegar plus 1/2 teaspoon sugar)
2 teaspoons super fine sugar
¼ teaspoon grated ginger
Ginger and spring onions shallots, finely sliced to garnish

Heat vegetable and sesame oil in a non-stick skillet with a heavy base. When the oil starts to smoke, drop in a half-dozen scallops. Don’t overcrowd; cook in batches if you need to.
Sear one side of the scallops until browned and then quickly turn over and sear the other side. Remove immediately from pan and leave to rest on kitchen towel. Repeat with the remaining scallops.
Wipe any excess oil from the pan, and return to the stove on a low heat.
Place butter, sake, soy sauce, mirin, caster sugar and grated ginger in the pan. Cook over a low heat until butter has melted and sugar has dissolved.
Increase the heat and reduce sauce until slightly thickened.
Remove pan from heat and add all the scallops back to the pan and toss them through quickly but until well coated.
Place some finely sliced ginger and spring onions on a scallop shell (or in small heaps on a dish) and then top each with a scallop. Drizzle more sauce over the scallops and serve immediately.
