Pan Seared Hog Snapper With Dill Sauce

This is fast and fabulous. Hog snapper isn’t really snapper at all, but it is delicious. Chefs call it hogfish, but you’ll call it a top ten dinner: Tender, flaky, mild fish topped with a tangy dill sauce. The only tools you’ll need are a whisk, spatula and knife and in 15 minutes you have a mouth watering meal on your plate. 

  • 1 tablespoon canola oil

  • Hogfish fillet

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon salt

  • 1/2 cup plain yogurt

  • 1/4 cup mayonnaise

  • 1/4 cup finely chopped cucumber

  • 1 teaspoon snipped fresh dill

  1. In a large skillet, heat oil over medium-high heat. Sprinkle hogfish with Italian seasoning and salt. Place in skillet. Reduce heat to medium. Cook until fish just begins to flake easily with a fork, about 5 minutes on each side.

  2. Meanwhile, in a small bowl, combine yogurt, mayonnaise, cucumber and dill. Remove the fillet from the pan, serve with prepared dill sauce.
