Perfect Air Fryer Chilean Sea Bass

Ready to use that air fryer for more than chicken tenders and fries? You won’t be breaking out any pans for this one, and the results are crispy and juicy. You can substitute your favorite side dish for the potatoes and save some time — but honestly, crispy potatoes is one of the reasons you bought the thing in the first place. Getting perfectly prepared sea bass from it is a huge bonus.

1 lb Chilean sea bass two fillets

1/4 cup honey

1 tbsp soy sauce

1 tsp red crushed pepper or to taste

1 garlic clove finely minced

Salt and pepper to taste

Cooking spray

Crispy Smashed Potatoes with Rosemary Aioli

4 Small Yukon gold potatoes 2 per person

1 tbsp. Fresh Rosemary finely chopped

½ Lemon zested and juiced

½ cup Mayonnaise

Preheat the air fryer to 375 degrees F and spray the basket with cooking spray.

Season the fish fillets generously with kosher salt and black pepper on all sides. Place it skin-side down in the air fryer basket and cook for 10 minutes.

While the fish cooks, combine the honey, soy sauce, fresh garlic, and crushed red pepper.

Brush the fish with the honey garlic glaze, increase the temperature to 400 degrees F. and cook for 2 minutes or until fully cooked through and the top is crispy and golden brown

Rosemary Lemon Aioli

Finely chop your rosemary leaves. Zest one half a lemon
and mix together with rosemary. Combine that mixture with mayonnaise along with the juice of ½ lemon. Mix well and keep chilled until ready to use.

Crispy Smashed Potatoes (PREP)

Par-boil your potatoes. Add potatoes to a pot and cover
them with cold water, add a tablespoon of salt and bring to a boil.
Bring to a simmer and cook until potatoes are soft enough to push the
flat end of a skewer through, about 5 minutes.

Drain water and allow potatoes to cool completely on a plate at room temperature. Set aside for later.

“Smash” your potatoes, one at a time, using a cloth to wrap them up and pushing the heel of your hand straight down onto potato to flatten, keeping its round shape.

Coat potatoes with vegetable oil and season with salt and pepper. Cook in air fryer at 390°F for 8-10 minutes, or until golden brown and crisp.
