Air Fryer Red Snapper Crusted With Potato Chips

Potato chips AND red snapper? You cannot possibly go wrong with this recipe. Even if you’re not a master seafood chef, red snapper is a very forgiving fish and you’ll knock this out of the park on the first try. We highly recommend using an air fryer as it makes the topping extra crispy, but you can also bake this in the oven — just turn up that heat!

4 snapper fillets

Salt and black pepper

½ cup panko bread crumbs

½ cup grated Parmesan

½ cup crushed plain potato chips

½ tsp. paprika

¼ tsp. cayenne pepper

2 Tbsp. unsalted butter, melted

Sliced scallions

Lemon wedges

Preheat oven or air fryer to 450°. 

Coat the basket or a baking sheet with nonstick spray.

Season fillets with salt and pepper

Combine panko, Parmesan, potato chips, paprika, and cayenne; toss with butter. 

Divide mixture among fillets, pressing onto fish. 

Cook fish until fillets flake easily when tested with a fork (20 minutes in oven or 12-15 minutes in air fryer, turning halfway through).

Garnish with scallions and serve with lemons.
