Beer Battered Grouper Fingers

There are damn few dinners that can beat grouper fingers. Yes, they’re fried. But hold on! These are only 190 calories per serving, and if you’re a fanatic, you can make them in the air fryer with just a spritz of oil. The batter holds in the moisture and makes a satisfying, crunchy wrapping for one of the best-tasting fish in the ocean. As with most things, the secret’s in the sauce. Serve with a chili-lime mayo, tzatziki or just plain lime juice. You really can’t go wrong.

2 lbs grouper cut into pieces 3 inches long

2 cups high-temperature cooking oil (peanut, coconut)

½ teaspoon salt

1 ½ cup flour

1 egg beaten

2 tablespoon garlic powder

2 tablespoon paprika

¼ teaspoon ground black pepper

2 cups beer (heavier is better, like Guiness)

Wash the fish and pat it dry.

Season with salt and pepper. Set aside.

In a bowl, combine flour, salt, pepper, paprika, garlic powder and egg. Mix well and then gradually pour in 1 ½ cups of beer while continuously mixing. Add the remaining beer until you get the desired thickness of the mixture.

Heat oil in a pan. Once hot, dredge the fish in the flour mixture. Then fry until golden brown each side.
