Sea Bass Mediterraneo
Fresh and bursting with Mediterranean flavors, this sea bass is easy to prep and quick to make. Fresh sea bass is mild and buttery, so don’t over do the Italian seasonings, just enough to remind you of lush groves of lemon trees stretching toward the mountains above a sparkling blue sea.
2 Chilean sea bass fillets
1 tsp Italian seasonings
Salt, to taste
Pepper, to taste
1 cup marinara sauce
1 cup cooked chickpeas
10 cherry tomatoes, sliced in half
2 tablespoons fresh oregano, chopped
Preheat the oven to 400° F. Line a sheet pan with parchment paper.
Season the fillets with the dried Italian seasonings. Next, season the fillets with salt and pepper to suit your taste.
Place the sheet pan in the oven for 20-25 minutes or until the fillets have reached an internal temperature of 145° F.
While the fillets bake, place the marinara and chickpeas in a small saucepan and heat on medium until warm.
Add the sliced cherry tomatoes and 1 tablespoon fresh oregano to the marinara and cook for an additional 5 minutes. Remove the pan from the heat.
Once the sea bass is cooked through, place half the marinara on each plate and put the fillets on top. Garnish with fresh oregano.
