Fabulous Flounder Florentine

The subtle flavor of flounder wrapped around a core of juicy spinach punched up with Parmesan makes for a stellar midweek meal. Our local fresh from Florida flounder, never frozen, is what makes this special.

4 (6 ounce) Flounder fillets

3 cups spinach

3 lemons, 2 sliced and 1 juiced

1 cup bread crumbs

½ cup Parmesan cheese, grated

2 tablespoons butter, melted

1 tablespoon oil, for cooking

Sea salt and fresh ground pepper, to taste

Thinly slice a lemon and place in the bottom of an oiled oven-proof dish and set aside.

Pre-heat a sauté pan and add the olive oil.

Sauté spinach for 2 minutes (until wilted) and season with salt and pepper.

Remove from heat and add the lemon juice, bread crumbs, and Parmesan cheese. Mix to combine.

Season both sides of the flounder and spread an even amount of the spinach mixture on each fillet. Carefully roll fillet and place on top of the lemon slices in the prepared dish.

Season with salt, pepper, melted butter and top with the remaining bread crumbs.

Bake for 15-20 minutes or until cooked thoroughly.

Remove from oven and sprinkle with lemon juice.
