Grilled Lobster Tails

The whole secret to making perfect lobster tails — no matter whether they come from Florida, Australia, South Africa, Maine, wherever — is to avoid overcooking. And while the guys from up north (Homarus americanus) are amenable to being boiled, boiling a spiny lobster (Panulirus argus from Florida or the Caribbean) will guarantee you’ll end up with fish-flavored bubblegum. It’s actually easier to cook a spiny lobster because all you do is put it on a grill and baste it. That’s it. You’ll end up with a succulent delicacy that’ll make you say “I love you!” and make her say she loves you for cooking it.

1 Lobster Tail (6-8oz)

¼ Butter (1/4 stick per tail)

1 Garlic clove (1 per tail)

1 Teaspoon Lemon or Lemon Juice (per tail)

1 Pinch Pepper per tail

1 Pinch Salt per tail

Skewers (1per Tail)

Using a pair of scissors cut the top of the shell from the meaty portion to the tail. (Only cut the shell). Slightly open the top of the shell so that you can see the meat.

Flip the tail over and insert a skewer from the tail through center of the meat and out the other end. This will prevent the tail from curling up.

Heat up butter and lemon juice with seasonings for 1-2 minutes in microwave. This can also be done on a stove if you prefer.

Grill on medium heat upside down (top shell down) for 5-7 minutes . DO NOT put tails over direct heat. Cook with lid closed.

Flip the tails over. After flipping, baste the tails with lemon butter sauce. Be sure to get a lot of butter and garlic inside the open portion!

Cook for 3-5 minutes with lid closed and be cautious of flame flare-ups. When the meat is opaque it is done.

Remove tails from grill, baste one more time and cover with foil for 5-10 minutes before eating.
