Grilled Swordfish With Lemon-Mint-Cilantro Sauce
Rock your taste buds with this grilled swordfish finished with chermoula sauce from Morocco. It’s easy to make and the combination of flavors will transport you to the mesmerizing medina of Marrakesh. If you’re feeling inspired, set out a bowl of rose water to partake in the ritual handwashing that precedes a meal in Morocco. In addition to the lemon, mint and cilantro you’ll taste garlic, smoked paprika, cumin and coriander. You don’t need to throw on a kaftan, but it wouldn’t hurt. Give this a little New World twist by substituting culantro for the cilantro — more flavorful and without the “soapy” note some people taste in cilantro.
2 swordfish loin steaks, 1½- to 2-inches thick, skin removed, about 1 pound each
1 cup packed fresh cilantro leaves
½ cup packed fresh mint leaves
½ cup olive oil
4 cloves garlic
3 Tbsp. fresh lemon juice
1 Tbsp. lemon zest
1 tsp. smoked paprika
½ tsp. ground cumin
½ tsp. ground coriander
¼ tsp. cayenne pepper
Salt and black pepper to taste
Preheat grill to high. Brush grill grate with oil.
For the sauce, process cilantro, mint, ½ cup olive oil, garlic, lemon juice, zest, paprika, cumin, coriander, and cayenne in a food processor until smooth; season with salt and black pepper.
Cut swordfish steaks in half to make four equal pieces. Brush both sides of swordfish with olive oil and season with salt and black pepper.
Grill swordfish over high heat, uncovered, until dark grill marks appear, 8–9 minutes.
Reduce heat to medium; flip swordfish over. Cook swordfish, covered, until it’s no longer translucent and an instant-read thermometer inserted into the center registers 135°, 5–7 minutes more. Let swordfish rest 5 minutes; serve with sauce.
